Just because January didn't look busy enough...

Every month...usually within the final week of the passing month or the first week of the current month...I update the whiteboard calendar in our kitchen. When I sat down to fill in January I noticed that it was looking SUPER calm....and hooray for that!!! Room for a playdate! So some girlfriends from church came armed with lunches for their kids and things to chat about and we had a wonderful time! I always have to jumpstart my brain to chat with adults...it sorta gets in a rut with typical 'mom-kid chat'..."um hum, oh really?, wow, yeah, um hum, well there ya go, yep, um hum...etc". And with my little ones taking turns waking us up throughout the night for the last few weeks I feel especially slow. So happy my dear brain got to stretch itself a bit! 

For the mommas, I made my favorite pasta salad. A recipe that my mom used to make for my girlfriends and me to take on spring break. It's DELISH! I suppose it would be a great first recipe to share on this blog that's just begun. Hope you enjoy it and are able to carve out a bit of adult chat time for yourself!



Mimi's Pasta Salad:

Ingredients: 
16oz pasta (I usually use a variety of styles)
1 1/2 cups of sugar
1 tsp salt
1/4 cup onion (purple adds pretty color but white or yellow will do) chopped
1 tsp garlic powder
1 tsp prepared mustard
2 Tbsp parsley flakes
1 1/2 cups vinegar
1 tsp pepper
1 packet of Italian Dressing Seasoning
1 cucumber chopped (leaving some of the skin on adds color!)
1 small jar of pimento (I never bother with this...but you can if you want!)
Black olives, sliced (if you want)
Grape tomatoes (or chopped if that's what you've got on your window sill)
Summer sausage, sliced and quartered
Small squares of cheese (colby, cheddar, whatever :)

Cook pasta (don't overcook), coat with a couple Tbs of olive oil, Mix next 9 ingredients in a mason jar and shake, shake, shake till its mixed up really well, poor over the pasta, let sit for a day or 2 in your fridge...stirring several times, add the veggies, etc...just before serving.
